Ikan Bakar

Ikan Bakar is a popular method of cooking fish in Malaysia. The fish is marinated with a blend of spices and chilis and wrapped in banana leaves, then grilled over a charcoal flame until cooked perfectly.

Literally means "burnt fish" in Malay, its is fish or other forms of seafood grilled using charcoal. Usually, marinated and then grilled; sometimes with a banana leaf between the seafood and hotplate. Some of the popular forms of seafood besides fish include squid (sotong) and stingray.

Grilling with banana leaves adds another level of subtle flavours, giving the fish a very complex and wonderful flavour.
The types of fish used can vary - Mackerel, promfret and other flat fishes are commonly used, as well as more exotic fish meats such as squid and stingray.
